Happy Congee

Ingredients
Good for 1
2 cups water
1-2 cups of rice
1/2 chicken bouillon
Coconut Oil
1-2 bacon strips
2 eggs

Procedure
- Set the saucepan to medium high heat, then add cooked left-over or refrigerated rice.
- Add water, then cover with the lid. Let it simmer.
- Meanwhile, in a frying pan, heat up cooking oil.
- Lay bacon strips in hot oil and fry each side until toasty and reddish brown in color. Set aside.
- Crack in the eggs for a sunny side-up in the bacon grease.
- Once the rice is simmering, mash the mixture until thick.
- Add chicken cubes and seasonings to taste.
- Plate the congee together with the bacon.
- Munch!
